I've only started to dislike OOT over the years and my distaste for it grows every time I attempt to replay it

I feel the opposite. I thought it was great on my first time, nowadays I feel it's cool but in a passive way.
Because it really is the best game ever made. It's like the Beatles, or Kubrick. We all like to pretend they suck as our tastes expand but eventually we all come back to the classics.

Literally every game has ways to cheese enemies
It's literally a speedrunner strat and not even a new one either.
Even ignoring crouch stabbing you can just jump attack and walk backwards while she revs up her attack and repeat until she's dead.
You can but angling your crouch stabs right, you can keep the pressure on and kill her slightly quicker. It's riskier but it's something that speedrunners do.
how can you unironically believe that as a grown man?
I don't believe in "best game ever made". I believe there's a pantheon of best games and OoT is one of them.

It doesn’t, it gets slightly worse over time. Still a great game though in 2023, especially the PC port running at 60+ fps.

Because it’s probably the only 3D game where every instance of verticality has an actual purpose. Think back to when you jump through the spider web as an example.
And this is why 3D Zelda has never been able to outdo OOT. It’s not the “adventure”, it’s not the “dark atmosphere”, it’s not even the dungeons. It’s that OOT was built to showcase the possibilities of 3D game design, of thinking in 3 dimensions instead of 2. And in that area, they completely stopped innovating and didn’t succeed at it again until like Mario Galaxy.

Every game after OOT just does verticality mindlessly. It mostly exists for its own sake or to limit the world. It’s soulless game design.
The difference is that OOT actually has intention and logic behind every instance verticality in the game. At the very beginning, you come down from a treehouse, that is a “lesson” for the kids to start thinking with verticality. It builds logically upon this as the game goes on, the kids need to start “remembering” what’s above and below them, thinking more three-dimensionally. This is why it’s still the most crafted 3D game in existence. Every other game treats verticality as just another floor once you’re on top of it.
And this is why Link Between Worlds was great - the “Link Wall” idea actually broke new ground.
The atmosphere in the game is superb and the dungeons and music really stuck with me throughout the years. The spirit temple's theme is my favorite, it really just hits me.
