I wouldn't really consider 3, 4, or 5 dating sims. Yes, there are elements of it in the games with relationship building, events, and a few dates, but it's so small in terms of actual text and gameplay quantity to the point where it feels tacked on, and your choice of girl isn't even respected that much by the game either. It's just kind of there.
The real issue of 3-5 is the infantile writing. It's worse in 4 and especially 5.
The social elements were in my opinion revolutionary at the time P3 came out for the game. It gave you other shit to do and let you experience other stories. I do agree that P4 and P5 leaned more to the hard cheese. P3 was a pretty deep and dark game. The theme of the game was death and its acceptance. Characters actually fricking die in P3 and there is more urgency in the big bad. In contrast P4 and P5 is all about the power of friendship with no consequences happening to anyone from the main cast. They stopped taking risks and made the games more diluted as they went on. I hope Persona 3 Reload selling like crazy and being the best selling game in Atlus history gives them pause to try a deep actual story for P6 instead of another power of friendship slop.

If the other games had truly innovated, they would've gotten a western audience to play them. Nobody gives a frick about who's first if somebody with the same idea sold better.

Anon, Sakura Wars are legit dating sims and what the characters in SW are is not even remotely the same as in Persona.
Even at their worst and most basic, in Persona 3 the characters were used to further explore the theme of death in the game, to tie their arcs into the arcana (a huge part of the game) and to power up the player character. It also directly tied into the whole time management aspect the game had going for it.

If only metric for being "deep and dark" is a superficial exposition about how people die when they are killed. If all it takes to be emotionally moved is to kill off some characters in ridiculous and avoidable situations, to create drama just for the sake of having drama, to having characters do stupid shit constantly to move the story forward but be angsty while doing it.
Look at how Atlus fools people into thinking that they are profound storytellers.

And 2 is the best game. Everything you get out of the overwrought dating sim elements in 3/4/5 you get from just walking around town and talking to everyone after each story event in the P2s. The fact that your party is just wandering around any place you go into and interacting with the world makes it feel infinitely more lived in.

This is true but the real reason Persona went to shit is Hashino, who has been Director/Producer on Persona 3,4 and 5; on the other hand Persona 1 and 2 where both directed/produced by Kouji Okada, who worked on Devil Summoners, Soul Hackers and SMT II which are actual good fricking games.
Know this anons: if you feel that a series suddenly went to shit, just look at people who worked on the games and compare them between each entry. A company its just a label, its the people who makes the games that actually matter and those always change with time.
