I think their design philosophy just changed when they made the DLC and thats the same philosophy they used going forward. All i can say is that the Bloodborne DLC frustrated me in the same way that Elden Ring did, right down to the nonsensical amount of souls you get for every enemy.

Bosses outside of the DLC and the obvious Gehrman/Gascoigne/maybe Logarius are the lowest point of Bloodborne and actually are filled with jank, stupid shit you need to rollspam through and commonly are moron easy. Most of them are also not really what I'd call fastpaced or remotely fun.
I have no idea if you're moronic or baiting or more likely just haven't actually played any game in your post. The first 2 bosses in BB all but teach you to rollspam and iframe through everything to get behind opponents. The "roll" in BB is also ridiculously good compared to every other from souls game for that exact purpose.
And it isn't just rollspam, BB has so many dogshit fights, at least half the bosses rank among some of the worst I've ever seen and a quarter more are still terrible. It's just the last quarter that are worth praising and people fondly bring up - who all ironically are guilty of the exact "the boss will just dash towards you and hit you anyway" shit you're whining about
You do it on the first 2 bosses, Amelia, BSB, Rom (honestly pretty much every shit designed beast boss that begins spazzing out and somehow eats half your life by doing nothing), One Reborn, Ebrietas, every humanoid boss. Pretty much the only ones you aren't using the overpowered roll are when the game decides to make a weak normal enemy a boss fight (Shadows, Emissary) or bosses with broken AI that barely even bother attacking (Witches, Nurse). Paarl a particularly hilarious example because you have to roll through an expanding AoE electric attack which shows they completely stopped giving a frick as to how rolls worked period

I really dont understand the reasons on what makes the game so highly regarded, even if I like the "hit to restore hp" mechanic, I found the armors being samey, the scenarios repetitive and many enemies just plain annoying.
Dropped after killing the furry dude, so it might get better later, I dunno, but from all the soulslike games I played BB is pretty meh.
At the time when it came out it felt like a cool souls gameplay spin-off, a kind of "what if" stamina regens very fast and you get other aggressive options and it's set in 1800s Britain and you get Lovecraft dreamlands and shit. It's also just fun and the music is great
