Tieflings aren't cambions or half fiends, your great great grandfather fricking a chaotic good half-dragon who's loosely descended from Tiamat a dozen generations back means you could end up born as a tiefling sorcerer despite both parents being blue eyed blonde farmers. One thing I always thought was really interesting with Tieflings is: how do you think the parents are going to react? All the writing focuses on how society reacts to Tieflings, but with a parent it should be even more dramatic because of how personal it is. How are decent, gods-fearing peasants going to react when they see their child coming out looking like a fricking demon? How is dad going to feel when his kid suddenly looks literally fricking nothing like him? Is John Q. Peasant going to know Tiefling lore and the fact that this is some horrible magical fluke and not the product of his wife cheating on him with a demon? Would he believe someone (say, a priest) if they told him the truth about Tieflings? Does he have any actual reason to believe said someone over his own eyes at seeing a child that has no traits in common with him at all and a tail and horns? There should be a lot more focus on this, and on the fact that a LOT of Tieflings grow up as feral children or in single mother households if they're not killed outright, because of families tossing out the cursed demon-child and husbands leaving their wives over assumed infidelity.
The average person tends to be pantheist, even in FR. They have a favored deity, usually, but they pray to the appropriate god for the activity or environment they find themselves in throughout the day. So the answer is "every god in the pantheon" which, if we're assuming 5e, is probably the core Faerunian Pantheon. It was being used as a turn of phrase to represent the average low-level, low-knowledge lay faith you can expect from a polytheistic village farmer.
We used to have lore that covered things like that, especially in the FR where if you go by the older books you know what kinds of marriage rituals are observed in different regions and cults.
Now that the setting is being depreciated as WotC is pushing the D&D Multiverse as one big setting instead of individual parts, I doubt we'll ever see a return to lore with depth. I was actually a bit surprised to learn this myself, but they recently reprinted quite a few books and removed any logos or brands that implied they're a part of any specific setting. Now everything is just D&D.

Impiltur formed its strong identity of knights and paladins as a response to demonic incursions and corruption coming from their border but every so often stuff slips through.
Also survivors of Narfell in general tended to not be pure blooded, which given one of the more common items among the Nar Demonbinders were rings that specifically gave immunity to succubi/incubi life draining, it's easy to see why.
Perfect place to make tieflings a common -ish race that could still be persecuted because of their neighbors, and still be rare enough in the surrounding lands to raise questions instead of just "they're everywhere lol"

There's a really long list of species that need to be exterminated. Goblins, Orcs, fricking Gnolls, Tieflings are so far down on the list that realistically they're never going to come up.

They're kill-on-sight if you aren't a coomer but the handful of tiefling diabolists hidden across the land are, as a whole, doing vastly less damage than goblin raiders and orc marauders. Consider also that if tieflings happen to be attractive women a solid 60% of men will be willing to hide them without saying a word, and a further evil-leaning 20% would in exchange for sex. Very few men have the strength to slay a pretty woman who just so happens to be the great-great-grand-daughter of Baphomet, and it's complicated even further when you take into account that around 20% of tieflings have enough mental fortitude and goodly, human blood they can, however briefly, rise above their nature. The ethical, lawful and good way to excise tieflings is to alchemically sterilize non-offending tieflings and incentivize them to do so with an equal compensation for their loss. That'll never happen though, because people want to see a cow-tail swishing between pastel neon-red cheeks.

It's entirely plausible that some sect of "true crusaders" would rise to power and enact a local genocide against tieflings. Such a crusade could even have divine backing, assuming a Lawful Neutral god that was worshipped as if he were good.
Sounds like a good concept for a campaign! It might be an evil campaign, with players on the side of the crusade, being opposed by Harpers. It would probably be pretty intrigue-heavy, since a game where you just slaughter red commoners for session after session would probably be boring. A good campaign would be an easier sell for your group; a foreign cleric, a tiefling refugee, and a wizard (this sort of fantasy religion tends to discriminate against arcane magic) trying to protect the tieflings and take down the crusaders, which might be secretly backed by a cunning Devil of some sort.
Also note that tieflings are sometimes radicalized and become the evil that their societies make them out to be. They might also become evil for the reasons any normal mortal does. Might make for an interesting moral dilemma for a pro-tiefling campaign, or serve as a layer of justification for an anti- tiefling one; say, that a wicked demob-dealing tiefling warlock once oppressed the genociding peoples' homeland.

So when the human murderer dies his soul goes to the nine hells to be the new toy of the devils. And if you genocide the Tieflings that means that means the devils will get shit lodes of new mortal souls to play with when those humans start dieing of old age. And the devils can just replace the Tieflings they just lost by fricking more mortals to get more half fiends which restarts the whole process all over again. Its like the devils version of farming.

What god? There a many and their creeds differ vastly.
