I actually like playing support classes because I like alternate ways to play. I'm not the kind who wants to rush in and do the most damage. If I want to play a game like that, I'll go play a 2D Platformer or single player RPG. Even then, if a single player game gives me an alternate option, I'll choose that. For example, I prefer playing summon nerco in Diablo 2.
That said, I did both WHM and BRD/DRG in FFXIV. And I really liked those classes. But FFXIV was so tank focused I eventually tried playing a tank. Because 75% of the time when a party failed, it was the dumb tank not doing their job. And playing a tank was so damn boring. That, plus the hundreds of hours of filler dialogue made me quit.

So tanks aren't forced to learn their job. The healer and DPS pick up the slack.

The whole healing pulse thing was fun and rewarded those who knew just when to tip the scales instead of sitting around with a healing tool, his weapons were good enough to remain lethal, and the self-res both could be a really sneaky play or addressed the fact that nobody else was as good or mindful enough to grab you when you do fall down. Unlike normal healbawds, he was exceptionally independent and tons of fun to play, and his design was fantastic. Easily my favorite char in that game in all regards

Not in FFXIV. If the tank fails, everyone fails. Because you as the healer will eventually run out of MP. You of course get the blame. But the problem was the tank. DPS does what you said though. You can lose a DPS player and still make it through. It'll just be slower. Lose the tank or the healer, you lose.
This is only considering 4 man of course. If you're doing the clusterfrick 8-12 man fights, you can lose multiple people. And healing is a lot more lenient.
In the first half of them, maybe. If your tank is properly geared. But if they are, they won't be doing those dungeons anyway. Most people doing those dungeons are newbs who can't play. They definitely need a healer to pick up the slack. Then in later dungeons, there's usually a mechanic somewhere that the healer has to clear. Like debuffs or poison or whatever.
I don't know how it works in other games. But I like classes that are about balancing efficiency and utility. Healers and DPS do that in FF14. WHM especially is about balancing the amount of MP you use. You don't just heal mindlessly to keep everyone at full since you need to conserve MP. In case the tank or DPS does something stupid (which they often do). Then, if you're in a group that actually knows what they're doing, you can start adding some DPS of your own. Some tanks and DPS are so bad, I can out DPS them while also keeping the healing going.

The guild wars 1 healing system was good since you're deckbuilding with a team to counter enemy stuff and the healing had a bunch of ways to counter pressure, burst(spike), hexes and conditions layered on like cake and having to decide if its worth removing something. always was fun trying to keep everyone's bars up while also weaving in movement and kiting.
