Mind you my experience was affected by me coming from Gen beforehand, but while Valstrax and Ahtal Ka were cool, XX offered very little new over the base game, it made tons of balance changes that made no sense, I hated Valor style, G rank progression was boring and incredibly linear (you don't replace your armor until postgame, and weapon progression is just Elder -> Lao -> Mantis -> BiS postgame stuff for every weapon), and G rank monster movesets kind of made the combat less fun considering the whole point was to let you go wild with styles and arts
It's probably due to the absolutely horrible hub grind up to ahtal kha, hunts take soooo long, like 30 minutes of non-stop fighting, which on paper sounds good but it reality is quite painful, GU still a pretty good game, one rise tried desperately to copy and in my opinion failed.

I've beaten bloodbath EX with just striker SnS.
Honestly I would call Bloodbath one of the more fair monsters because just having earplugs makes is easier to deal with.
You would be surprised how many people don't get earplugs and eat shit almost instantly in that fight.
If you play striker SNS you are most likely using the roundslash for the i-frames which isn't much different from parrying
You don't absolutely need parries for it but if you don't have one at least being fast and mobile is an advantage
The weapons that are truly fricked against Bloodbath Diablos are the slow weapons without parries like SA, Hammer, HH, etc
Even Lance performs very poorly in that fight despite being one of the best weapons in the game otherwise
Honestly I guess in summary it's really less of a problem with the monster itself since you could put it in World or Rise and it'd be perfectly balanced there, it just happens to be a perfect example of 4th gen having poor tuning of hunter vs monster abilities in general, going all the way back to the terrible balance in 4U
Too many weapons in GU have to crutch on Readiness just to be able to move around and have a decent defensive option, and harder monsters like Bloodbath Diablos really expose that.

Honestly Redhelm Arzuros on higher difficulties I found to be one of the harder monsters if you don't just spam its ass with paralysis weapons because it has a severe weakness to it and its resistance to it barely grows.
I'm not sure why but if that thing gets even the slightest bit of scaling everything just hurts.

The combat doesn't get any more interesting on your end. The monsters get stronger, but you pretty much have your full moveset from the start, so it depends on if your issue was with the game being too easy or you not having enough moves you can do.

You might like Rise then. Wirebug skills are basically weapon abilities.
They were designed to be obtuse and clunky. The more efficient you become with a weapon the better it feels. Like learning to ride a bike that shoves a dildo up your ass every pedal.
don't be mistaken though, the hunter moveset is actually really deep and it has a huge skill ceiling depending on weapons, you can look at weapon guides to make sure you understand the extent of the moveset in World/Iceborne if you like, the vid will show the extent of the controls and how later game monsters look and fight so you can make a decision based on that.
In World/Icebornbe some weapons have "ultimate moves" arguably but they are not the "press q and something cool happens" type of thing, you need to weave them into your combos knowing how and when and why, if you want the first one rather than the second one, MHRise is better for that type of flashiness.
Dos is the most unique game, more of a life simulator than an action game, but it's JP only

Gen Ultimate is a celebration of classic monhun before they moved over to world and has the most different monsters
World is the template for the series going forward, cutscene issues aside it's the most fun imo
Rise is the fastest and easiest early on but the endgame is pretty difficult, wouldn't recommend as a first game because its unique gimmick teaches some really bad habits for the other games

I didn't play Rise and I'm a hunting horn lover, it is the only weapon I really know and can't make myself switch.

instead of note combinations, the notes directly define the songs. Depending on your switch skill, you either just play your notes twice in a row for an automatic proc or you use encore to trigger a song for each single lined up note.
The moveset is basically just taking some of the encore animations and incorporating them as combo variants.
If you like HH for the wide swinging impact moves, it's just as good if not more fun. If you have fun specifically with lining up songs, it will be less interesting to you

Oh boy, new HH only has 3 songs per Horn now, locked moves behind a meter, and all the songs are just the two same notes and they can't be enchored to make the less powerful songs viable.
Recitals are gone unless you take Echo mode but then the song are only one note each. And you have a move that plays all your songs at once and there is no reason not to just spam that over and over again.
It's not even the same weapon and I sincerely hope the revert all these changes for Wilds. It is a horrendous bastardization.
The moveset is extremely spammy now, all notes are the same on all horns (green, red, blue), all horns only have 3 songs, no recital to play notes (songs come out as soon as you get the notes right), all songs are 2 of the same note, song effects are extremely dumbed down and you no longer get interesting situational buffs like wind res or earplugs, the "recital" is now just your self-improvement song with a breakdance move that has a ton of i-frames, spin from IB is now only available as a meter move, and if you play 1 of each note you can just use a song that plays all your songs at once, negating the need to even use the dedicated (dumbed down) note combinations. This was all done to increase weapon usage. HH is the third least used weapon, with a whopping 3% usage.

It was the second most used weapon in the Rise demo, HH usage in the full game was low not because of the playstyle but because it got nerfed into the ground to remain the weakest weapon, and also because they fricked up the numbers and the weapon's playstyle ended up just being recital spam and earthshaker rather than doing anything actually cool so people lost interest

LS is the most used weapon by a massive margin but it's the 4th weakest weapon, actually BELOW HH in speedrun times. The fact is HH is a niche weapon and once the spectacle of a new moveset wears off, only the dedicated few will stick to it. The moveset change did nothing but remove the complexity from the weapon.
Also, they added a specific chargeable encore move called "Infernal melody" which is basically an universal Attack Up song. Sure, there's still horns with Attack up, but it makes you feel less dependant on picking them

reading those interviews where they talk about how they wasted 1/3rd of their overall development time on a monster even world babies think is shit is always so depressing.
It always seemed to me like there was an attempt at making the visual progression of weapons more gradual, with the idea being you start with a base bone greatsword, then you staple some Anjanath feathers to it, and eventually it becomes a new design. At least, that's what I imagine they might have been gesturing towards, but likely for simple time-constraint reasons they ended up with what we got basic weapons with different colors of feathers that didn't change much until the end of the tree (sometimes). It's notable that that design trend was curbed significantly in Iceborne, with a much greater portion of weapons ending up with unique designs, so I'm willing to believe it was just something that got time-crunched because other parts of World were more demanding.
Assuming they're using World as a base, the infrastructure is there to where they shouldn't need to do something like that again, especially considering Rise was able to have all the weapons end up with unique designs, but I think the idea of progressing is interesting. I do admit it feels kinda weak when you get a tier 3 weapon with a cool design, and then that just never changes again despite upgrading it like 4 times over the course of the game
God, that really killed my motivation in the game as a SA user. I know people like to shit on Rise but Rise got it right on the weapon designs. I pray they update those lazy bone and metal designs especially the shitty drumstick DB. I hate those with a passion.

I think MHGU has the sweetspot for the artstyle in MH, the drab and moody maps are still gritty and fine looking, but they also have colorful maps all over to balance it out, I think it's something that many people forget, it's okay to have darkness, or gritty colors, or colorful colors in a game, but when it's the ONLY thing a game has, it' gets old.
A rainbow fest would be just as annoying to me as the desaturated and sad looking maps if it was all the games had to offer, it's okay to have both things.

Sort of. The set-dressing surrounding the actual hunts is heavily simplified from the older games, but the actual fights and weapon mechanics are a lot more complex. In older games, there was a much higher focus on pre-hunt prep and inventory/storage management.

event quests generally sucked and had terrible rewards (this only got worse with Rise because all the good cosmetics are DLC now)
people might disagree but I think grinding for every single deco you need is way worse than grinding for charms
title updates were all dogshit besides Deviljho

both crossover monsters are horribly unfitting and someone even worse

In some cases I empathise. With live service shit like MMOs you can't just go back and play the version of the game you liked, it's taken from you forever unless a group of dedicated autists that also liked that version manage to make a private server for it.
If it's old games that you can still play just fine then I don't get why those people don't just play those games.
I'm not saying people who like video games can't criticize or complain, or vocally hate certain practices. Hell, I'd say you don't love games if you don't do those things.
The difference is the latter group seeks out things to hate. They intentionally avoid enjoying things so that they can pick out teeny tiny nonsense to hate, and they do it for fun.

cancel an AED with right trigger to buff your shield (increases Guard skill by 1 iirc)
do the big downward sword swing with a buffed shield to buff your sword
press B+Y (xbox) twice in sword mode to do a fast AED
hold back on the control stick while doing a big AED to make it a little AED
google charge blade guard points and how to AED out of them
that's all I remember, charge blade is the most complex weapon to control so good luck

Rise is faster and has an easier start. World is more well-rounded and currently has more players due to the comeback event.
I would recommend world personally but i don't know if rise will click with you better.

I really like the idea of an open world MH but I'm not sure how it would work

all that would happen is you would just be fast travelling everywhere
If it brought with it a greater focus on preparation for journeys and manually tracking down monsters it would be cool, but capcom has settled in on MH being a boss rush game first and foremost, so that isn't happening. An open world MH would just be a whole game of guiding lands grind.
I'm not really a fan. I think there isn't any benefit to an open world that can't be achieved with just having large seperate maps. If you want scale then just make the maps larger but having all the different biomes actually just be one contained map just makes each biome feel small and artificial. Like the assumption has always been that what you play in the map is just a small part of the greater whole of that biome so you get the illusion of greater scale and globe trotting without actually needing to do anything.
