I think it should stay extremely faithful when it comes to story, dialogues, cutscene direction and music, but when it comes to gameplay and level design, it should be completely redesigned and made from scratch.

It's not. Snake Eater has enormous potential, devs had to give up on a lot of things during the development due to hardware limitations, and it's a complete waste not to expand it.
If I wanted to replay MGS3 designed for 6th gen platforms, I'll replay MGS3HD from Master Collection. I want MGS3 designed for current year hardware.

Reused audio is such a horrible idea. That means the boss's can't have new lines/interactions during the story. No new codec, can't have different interactions with enemies saying new stuff. not sure why they're doing that.

If you're remaking a game you need to add a twist that distinguishes it from the original. Like they did with Resident Evil and Final Fantasy. People think this is an insult to the source material but I think the opposite, it means acknowledging that you can't outdo the source material in being itself and thus doing something else entirely.
I finished MGS3 like 50 times, know every line from memory and am not feeling too hyped about this because it'll just be my 51th playthrough with better graphics.
