Now that's no longer the case, you're forced to play as a vague non-binary genderblob who simply "identifies" as either man or woman but this has zero effect on the actual gameplay.
I don't think I've played a single game where male vs female alone by itself gave you different stats or some other noticeable outcome. Not saying there isn't a game that did this, just that egalitarianism has been the norm since fricking forever. It's always been mostly an aesthetic choice
I'm pretty sure old Bethesda games and other RPGs of that kind had changed dialogue options from certain characters if you played as a woman. Can't think of examples off the top of my head but I know it was a thing.
You even have more innocent examples like how the old Pokemon games used to have a distinct "male character" and "female character" with completely different looks, clothing options and their own canonical names, but in the new games you just play as a genderblob with the exact same clothing and hairstyles no matter which "identity" you choose.

Videogame developers are lazy fricks. This whole "body type" thing stems from the fact that they don't want to hardcore gender in because it's more work. Also it means they can use the same outfit mesh, so they only have to do half of the work now

The developers I follow also don't subscribe the pronoun philosophy so it never comes up in community discussion. You do still have the option of making an explicitly male character as that's what the identity section is for. However, this doesn't really serve any purpose besides dictating pronouns in dialogue because there's nothing that gender limits in terms of customization options This gives players more options to express themselves without actually limiting you in any way.
You do realize that muscled males look different than muscled females right? It's pretty hard to hide breasts and hips. The solution is not to pretend that muscled females look male, the solution is to provide muscled options for male and female base body types.
