Wrpgs are bad games and it is unfortunate so many feel compelled to play them due to wanting to support western culture.
Every wrpg is the same. It has a barebones main plot. Sometimes it might have some decent effort into the plot but it always takes the back seat. This is because the main focus of the wrpg is alwàys the side quests. The side quests fill up the majority of your playtime when playing a wrpg. A typical example of what most wrpgs look like is skyrim or witcher 3. You have your main quest to move the story forward, but you are expected to space out playing the main quest by doing many side quests. These side quests are usually not related to the main plot at all and just consist usually of a random npc needing something done for them. Thus, you have your mercenary simulator.
Whether it needs to be collected bear pelts or raiding a bandit camp to get a family heirloom back. The wrpg is going to have you spending most of your time solving every mundane issue that the towns folk has.
What this ends up looking like from a story perspective is the main character having to save the world, but he keeps meandering around doing chores for random people as the terrible evil he is supposed to stop is approaching.

I would be ok with a low stakes rpg where you are just an adventurer doing regular adventure stuff, but almost every game has to shove in a plot about a world-ending threat somehow

Pool of Radiance is great for this. No giant "save the world" plot, just "you've been hired to help take back this city, section by section, and then you kill the creature orchestrating it at the end, becoming local heroes.
Pool of Radiance is the first part of a 4-part series. After you take back Phlan, you do go to save the world, and again, and again because Bane is a greater god who doesn't like his shit pushed in.
Being able to ignore the main quest is what makes a RPG good. I don't care about the world ending plot the devs added just to market the game to the brainlets that care about "plot in story" in their games, i just want to build a cool character and resolve quests however i want.

That depends if the main quest is a major part of the game or even any good at all. Morrowind's main quest is great, Skyrim's? not so much
