Then I looked at Steam achievement stats, and saw that one third of all people who own the game beat her. One fricking third. Most games don't have that many people beating the prologue. Someone explain this to me.

So not even beat the game, just entered the final third of it. Meanwhile Malenia is literally the "hardest" boss and an optional one, generally only fought as one of the last bosses in the game.
Technically 44% of players beat her as 22.5% of people who own Elden Ring have never played it. For comparison, 37% of players beat Nameless King in DS3 (accounting for 6.3% of DS3's owners never having played the game).

Are you just assuming that people who got the easiest achievement, are 100% of players? Because that’s definitely not true in Elden Ring, Roundtable Hold isn’t offered unless you A) die to Margit, or B) go to Caelid or Liurnia.
There’s potentially 10-15 hours of content before even being offered Roundtable acsess.
Meanwhile DaS3’s first acheivment is lighting a bonfire, which is at most a couple minutes after starting, and 1 minute if you don’t try kill the big lizard.
mods (cheats) don't disable achievements, mimic tear exists, being level 200 in NG0 exists.
Fromsoft advertised that elden ring was going to have an easy mode like two months before release with the spirit ashes and shills have desperately memory holed that. Not to mention how broken weapon and spell balance in the game is

Honestly the incant run was the worst. Uncharged lightnign spear was the only reliable spell to hit her but it also triggered waterfowl every other cast.
