What am I doing wrong in this game, I'm pretty good at Souls but the dodging and parrying in Sekiro feels completely different. I can't seem to nail the timing
You should rarely be dodging, unless that's actually the best response to an attack. There are almost zero i-frames, I think. You can deflect almost every attack in the game, just about every attack that doesn't have a red kanji pop up. Deflect should be your default move in any scenario, I would say.
The timing is hard to describe. It just is what it is, there's no funny business like parrying in dark souls where you have to wait for the enemy's hand to be 3.5 inches from your head or whatever bullshit. Simply deflect right before the attack hits you. Timing gets hard when enemies start mixing fast and slow attacks, delayed attacks, or just awkwardly slow attacks that make you jump the gun. Deflects are normally 30 frames, unless you mash the deflect button and then they very quickly drop to almost no frames. So don't mash
Apart from what that anon said, your tutorial bosses are Lady Butterfly and Genichiro. If you haven't beaten them yet, use them to practice the combat. Genichiro is probably the best tutorial boss, since he teaches you aggression and how to deflect (or at least block) attacks.
If you can beat Genichiro, you can beat Sekiro. It just takes practice and patience. Keep playing the game and you will get there.
Yea, with enemies and bosses recovering posture like you do, aggression is necessary. If nothing else, you'll avoid drawing fights out to exhausting lengths of times. But even before that, some bosses recover posture so quickly that you have to damage their health to reduce the recovery rate. Then focus on the posture

Genichiro whiped the floor with me for 3 hours. But everything after that was kind of easy. Only other boss I had problems with was ape.
There is nothing about the moveset of Isshin or Owl that makes them harder than Genichiro. And since you have a lot more experience with the game when you fight them, compared to Genichiro, they are just pushovers.

It's to the same extent as the Souls games. Gwyn isn't much different from Asylum Demon (and is even easier if you can parry), Gael isn't much different from Gundyr, and Margit isn't much different from Radagon.

I don't know how you could say that, since Genichiro is literally the opening act of Isshin's fight. Genichiro is jobber-tier compared to Isshin.

At the start of phase 2 grapple to the highest branch and you can get a free deathblow.
Other than that just get the deflect timings down and his posture bar will go up fast. Use purple gourd if you're not consistently dodging the phase 3 terror attack. You can also deflect his landing right at the start of the fight and start smacking him straight away instead of getting pushed back or waiting for it

Use Divine Confetti if you think you're lacking dmg, don't think about how it is a scare resource Because you can buy it with money at any shop after beating Monk
