Why not Fate/Gods do the whole thing themselves since they have so much power?

They don't want to risk a god-war and so pick a champion to represent them instead.

Wrong. Fat = You just survive constantly because of luck.

Power of the gods = You can only die if you basically just give up, or get countered by an enemy who is chosen by other gods.

"Fate" isn't luck, it's literally, "This was supposed to happen." When something is "fated to be", that means it was supposed to happen.

    > You're the chosen one because god knew 6000 years ago that you were going to do all of this shit because you went back into the past and told her about the apocalypse happening in the future that you needed help with, creating a stable time loop where God has spent the thousands of years between now and then stacking the deck in your favor as much as she possible can so the final days can be stopped once and for all specifically because its the one future that she knows gets mankind *at least* this far instead of being wiped out.

I like the Dark Souls deconstruction the best, where the entire prophesy and in fact the entire religion is just made up to dupe someone into doing Gwyndolin's (originally Gwyn's) bidding

Chosen one (singular) has no place in TTRPGs, all it does is make said person the main character. Either the whole party must be chosen, or have nobody chosen and the party is just these guys.
This is why the Icewind Dale games are the only Infinity Engine games to properly imitate a D&D campaign.

Neither. I'm the chosen one because I choose to be the one who puts a stop to the great evil. The prophecies are merely my own ambitions predating me.

The chosen one is dangling on the gate of the city of the damned, an iron spike driven through his skull. The heavens and earth are in chaos. The god of fate has been reduced to a gibbering mass in the corner, driven insane and mumbling, "it's coming it's coming it's coming" before being unceremoniously mercykilled by the god of war.

Wasn't Harry Potter the chosen one because his mom loved him?

No, that made him the Boy Who Lived.

He was the "Chosen One" because Voldemort heard a prophecy that a baby born in July would grow up to challenge him and only one of them could survive, because the prophecy essentially predicted Voldemort would hear the prophecy and try to prevent it, thus creating his own enemy. Dumbledore knows this and leverages it into his series-long 4d chess match with Voldemort.

Honestly one of the more interesting takes on prophecies and chosen ones IMO.

            >Voldemort would hear the prophecy and try to prevent it, thus creating his own enemy
Not trying to dab on you but this is pretty common in greek tragedies, the early example I can think of is Oedipus, his father hear the prophecy that his son will kill him and marry his own mother, to avoid this he order to the kid be murdered/taken away. Oedipus endup growing without knowlodge of the prophecy or his parents identity, so one day he kills a man and takes his women, just to find after the deed what the really did it.

In popular culture I always remember about a short story Alan Moore wrote about the Green Lantern Abin Sur, how he tried to avoid a prophecy that he would die because his ring would fail him. To avoid this he started to use a spaceship that one day crashed into yellow radiation and killed him. Had he used his ring alone he could have detected the yellow energy, so by trying to avoid he endup fulfilling the prophecy.

The greek myth of Danae, mother of Perseus too.
Her king dad was told by the oracle that he'd have no sons, but only a grandson that would kill him. So, he locks up Danae in a tower. Her weeping ends up attracting Zeus, who gets her pregnant... Etc etc, the child ends up killing his grandpa in a completely random incident.
