There are several platformer tutorials that are solid and will give you a great grasp of the engine.

Once you finish with those, look up the GDScript reference page. This page is important, and you will always come back to it, so keep that in mind. For projects, start small; don't go big. Godot has pre-built scripts for you to look at so you can get the gist of it. If you still having trouble, check out Udemy. The majority of times they have sales, and you can get good courses for 5 bucks.

What I have in mind is a First Person, point and click detective game with turn based combat, similar to SMT.
There are both point and click adventure games and turn based JRPG-esque games made on it, look at my link (not quite literally a PnC but that's just semantics) and Cassette Beasts.
Their new-new changes seem reasonable, but the fact that they pulled that kind of shit in the first place and made the person in the company who had practically nothing to do with it make the apology has ruined my trust in them.
