For Remake/Rebirth, unsure honestly. The Sephiroth here seems to work outside of a lot of the traditional rules. I think the Sephiroth we fight at the end of Act 1 might be some form of a true Sephiroth since he knows more about the "timelines". Though it honestly depends on how they play the new timeline stuff. Lots have argued that it's not exactly a second timeline, more like false memories of the lifestream.
The genetically enhanced but not immortal supersoldier Sephiroth was fatally wounded and barely standing, and fell into the lifestream while holding the head of a 10 000 year old immortal telepathic alien shapeshifter that can survive even when chopped to bits. I wonder which one came out on top, must be the guy who died. There's no way the shapeshifting alien who devours the life energy of planets would've assimilated Sephiroth's dying but genetically compatible body and decided to devour the life energy of the planet. It especially wouldn't have assumed the form of someone who is guaranteed to intimidate Shinra, provoke Cloud, or trick Hojo into assisting it. I think ShinRa is more advanced at their peak than the Cetra ever were. Materia and its derivative technologies would always be limited to individual spellcasters and their personal MP reserves, which might be fitting for some use cases (SOLDIERs use it) but Mako is genuinely boundless magic sci-fi juice that can do anything.
It's important to remember this. Materia can almost do anything, but it's limited to traditional magical invocation. Mako can do literally anything.
That's why Sephiroth can go toe-to-toe with Jenova spiritually: he also has Mako infusion and is one of the most powerful beings the universe has ever seen as a result. He has the canonical special sauce.
Likewise, you can't underestimate Hojo's scientific prowess. They made that clear with Crisis Core. Hojo, with machines, is more powerful than the Cetra at their height; Sephiroth and Cloud are more powerful than that still; who knows where Weiss and Nero fall on the overall ranking, but it shouldn't be underestimated either.
I know it feels like massive DBZ powercreep but to me it was always justified by the fact that FF7 is a real "end-times" depiction. The world is more on the brink of destruction here than in most FFs. That "Now is the time of monsters" type of atmosphere justifies powercreep. If you think about it, places like Costa del Sol and Gold Saucer further that - think of the Weimar Republic before WW2, or America.
In the original he's sealed in some mountain or something, don't remember. And the Sephiroth you see walking around is Jenova supposedly manipulated by Sephiroth.
