Probably because it wasn't well-established what a Pokemon name should be like. There's also Gloom, Ditto, and Golem, which are just words, spelled correctly and all.

I always assumed that "porygon" was a really tortured play on "polygon" and "origami" because it looks like an origami bird

Given the low budget and dysfunction of gen 1's development I'm willing to bet a Japanese dev or someone from Nintendo was trying to tell one of the translators the English translation of porygon's name and they found how he said "polygon" funny enough they used that as the name
This isn't true. All the Pokémon names in Japanese have an romaji (Latin script) trademark name counterpart and for Porygon, it's Porygon in Japan too before Red and Blue were localized.
You can see this spelling in the first Japanese Opening which came out in 1997, while Red & Blue came to the US in 1998.
There was no formula for naming mons during Generation I's development. Many generations passed with them still not knowing how exactly mons should be named and subsequently churning out rather low quality "good enough"'s.
It took till Generation IX to get something as simple and elegant as 'Lokix', and even still they're using something as bad as 'Kingambit'.

There was a poster of the original English names before release and there were far more that were just English words. Arcanine was Blaze, Parasect was Parasyt.
Machoke was kungfoo
The original names got incredibly simplistic at times, too.
Haunter is "Ghost". Gastly is simply "Ghos".
Moltres is Fire, Zapdos is Thunder, and Articuno is Freezer.
Vaporeon is Showers, Flareon is Booster, and Jolteon just pluralizes Zapdos's name as Thunders.
Then you got stuff like Dratini, whose original name is Miniryu, which is basically just "mini dragon".
Honestly, the localization having simplistic names for gen 1 Pokémon is pretty faithful to the original names.
