Good thing that "weird" and "unknowable" are absolutely worthless as metrics, since they vary so wildly from person to person.

That's confusing race with culture.
You cannot well roleplay a member of an exotic culture. But the minds of almost-humans are human or extremely close to it, so you can roleplay them as well as any humans within the culture they are a part of.

You have no idea what its like to be a german Landsknecht, a french WW2 sniper, a hyper-advanced Japanese cyborg from the 23rd century, or any number of other basically human beings, this argument is both silly and immediately refuted. You cannot roleplay anything because you do not have the personal knowledge to play anything besides your own person, and even then most only barely know themselves. And most of the species you would roleplay as are so close to human, and yet weirdly not, that playing them as variant humans is perfectly fine. Human thought isn't unique, and much of what we consider the human condition is just what any sapient social biped would be like.

I think for the most part you are right.
I feel like a lot of players are so caught up in making their characters "special" (IE the most blinging race with the most unintentionally over the top or edgelord back story) that they cease being a character just a sum of attributes. And those players are generally the type never evolve their character away from those basic attributes.
Like you could pick the most generic character, a nature loving elf archer and turn that character into something really if you tried. And result is always going to be better than the turbo unique weirdo characters some of these people make.
As someone new to the hobby, can you truly wvolve your character? The fact that you need to situate your characters in a good/bad lawful/chaotic axis when you create them sends me the opposite message.
Now I've always heard that this was about xollective storytelling, so I'm inclined to believe you, but the rules seem to work against dynamic character writing.
The alignment is not a straight jacket, it should inform you what the characters core is and what responses are most likely from him. There is a section in the book explaining how, if your character acts against their alignments it should change to reflect your roleplay.
If you mark your character as Lawful Good, that means he should act in lawful and good ways.
Most of the alignment is le bad or alignment shouldn't exist shit comes from that ´layers who insist that they should still be lawful good heroes that the peasants love even while acting like chaotic evil monsters that burn down orphanages so they can rape the burnt corpses of the orphans.
Well if your alignments change when your character develops why do they exist in the first place? You can't deny the chart's existence exerts a certain pressure to play by its rules.

I think the issue is not in letting players choose different races, the issue lies in the standarization of all races. Like how they all live together in modern fantasy worlds, they all have the same classes and work almost exactly the same.

Remaking this thread gives meaning to my life. As a kid I got taken in by the wrong friends, got addicted to fentanyl, now I'm set where I am, I can't change myself anymore. But if I keep remaking this thread, there's something else, I dunno, a job you could say, like I feel I've done something today and now I can be happy.
My mind works at about 20 paces faster than everyone else's, I could roleplay an entire party at once if I wanted, an elf is NOTHING to me.

That's why all my playable characters are actually derivations of humans. Tieflings? Humans with an unfortunate hereditary disease. Half-elves? Humans with alien unfamiliar bodies but psychologically unchanged. Half-dwarves? Don't exist, play a buff midget instead. Halflings? They get a pass because they're just small humans but I'm watching you.

I did that in my sci-fantasy campaign. All other races were engineered through magic and natural humans, while most populous, were also one of the bottom rungs of society.
