I bought that switch Sonic collection for my autistic zoomer cousin. I watched him play it for a while and he seemed to enjoy it. He looked at me deadpan and asked, "so did this come out before Mario?" He was under the impression that Sonic was an ancient series that Mario came along and killed but evey few years you get a new game, like what they do with Pacman. I think he expected something that looked like 2nd or 3rd gen games.

If I had to guess, combination of nostalgia and feeling that "Eggman" isn't a particularly threatening name. While saying that the doctor was never threatening wouldn't be accurate, the english side played him up as more of a straightforward evil villain with his childish aspect so that image stuck for those people.

In Frontiers, you can listen to one of Eggman's audio logs and he says that "Eggman" is a nickname Sonic gave him, but he adopted it to intimidate his enemies. I don't think the name "Ivo" ever was mentioned in the games, though.

What's contested is the point he adopted the "Eggman" nickname. Lore is that Sonic used it as an insult and Robotnik liked it enough to make it his alias. WHEN that happened, no one's sure. If Sonic 1 isn't the first time they met like the Japanese manual implies, it's probably whenever their earliest meeting was.

Game Robotnik also likes casinos and amusement parks. He had an entire room with slots and toy rides on Egg Carrier in Sonic Adventure. That's pretty much all he wants from life - to expand his area of influence (via building cities and factories) and have fun exclusively for himself (via theme parks). All of that resulted from lack of parental attention in his childhood. His grandfather was an icon for him, but he always loved Maria more.

Eggman is his alias. His stage name. The one he wants branded on the planet so thick in its crust you can read it from Uranus. It's much flashier and bombastic than his real name, and Eggman was always about spectacle over logistics. He makes the most impractical robots, cities, theme parks, and death traps, simply because they're flashy and bombastic. He's a manchild that is less about why and more about why the frick not, so the silly sounding moniker that he has given himself/embraced (depending on your region) is more than fitting.
It was always Eggman in JP, though having that be his actual name feels off, even though it's so iconic, I think having Dr. Ivo Robotnik, which is a cool name, be his real name, and Eggman be the way Sonic call him, makes a lot of sense, it's not a bad compromise that they came up with afterall.
