Man, what the frick happened to game UIs? They used to be elaborate, cool and fun. Having as much iconic gusto to them as the game itself, adding to the atmosphere and immersion, and improving the overall experience. Nowadays it seems they're trying to make games as forgettable as possible even down to most basic minute features.

Newer television and pc monitors use an inferior system for contrast and generating true black (which it can't do well). These displays cause burn in (the image burning into the screen) and HUDs and UX elements end up being the first thing that burns into a screen or monitor.
The changes seen in HUD and UX design is in part because they are attempting to combat something that happens in newer tech that wasn't present in CRT era displays.
They are also liberalized cuckolds, but that is a different matter.

I like whatever the HUDs are that look like the things they actually are (when trying to google the name the wikipedia for HUDs even mentioned the screen burn in lol).
Fallout 4's power armor is the only thing I can think of in modern times that looks neat, and only the power armor HUD.
Where we lost good HUDs we gained some kino maps like in Elden Ringu.

UI is simplified because it scales easier. Before everything was just 480p. Now you it needs to work for 480p, 720p, 1080p, 4K, etc. Unique UI does not scale well, emulate a PS1 or PS2 game and you'll see that menu and text don't look good.
Are you moronic? There's literally no difference in making UI in 480p or 4k if you do it from scratch, it's just fricking art. Open photoshop and draw a life bar that's 2000x200 pixels instead of 300x30.

That's because the UI elements are done in 2D and the resolution can't be scaled like anything being rendered in 3D. Plenty of PC games offer UI scaling or have mods for it with old game stylized UIs. What you're trying to say doesn't make sense at all and you clearly don't know what you're talking about, which is par for the course in these kinds of "bitching about modern game design and engines with collages of games I don't play" threads.

Because games are seen more as corporatized safe slop, they need to do "what works" and that means not deviating too much from current game mechanics
A menu working differently a being slightly "confusing" due to it's art style and functionality could mean loss of fales
