I will hand them this though, if you've ever ridden a horse before this is the greatest horse simulator I've played. It feels like you're really riding something and not fully in control
the thing about horses is they have their own will and want to do their own thing while riding. Part of riding is keeping the horse on track and making it do what you want instead of what it wants
its exactly the right amount of that, I used to ride a lot and it feels exactly the same way where sometimes you need to coax the horse along a bit
especially when you're meandering through tight areas and the horse will often want to stop and start grazing and you have to be a little more assertive, come on..come oon, get going

I love how in the first colossus, no music plays until he notices Wander. It's a great touch. All the other colossus have music instantly play after their intro cutscene is over (or during the intro cutscene, in the case of colossus 2 and 9)

they saturated the hell out of the colors and got rid of the bloom lighting in favor of natural.
the first point can be somewhat fixed with something they added called Photo Mode, which is a set of shaders that make the game look different in a lot of ways, and they have like 2 or 3 parameters you can change. so you can desaturate the game by putting it in black and white mode and changing the intensity so that theres still some color. its not quite the same at all though.
The bloom cannot be gotten back, and to me it's the most important part of what gave the original game its atmosphere. In a nutshell, it went from being a unique looking game full of SOUL to just looking like Skyrim or some other generic fantasy world.
Don't play it.
People don't like to acknowledge this about remasters/remakes, but even just changing the colors, brightness, lighting, and overall art style can have a pronounced effect on the game's feel and tone. PS4 SOTC does not have a bad feel to it at all, but I definitely prefer the PS2 version.
What's worse, a "1:1 remake" that completely fricks the art direction (demon's souls, sotc), or a "remake" that completely rapes the source material (ff7 remake).
