So my group has finally gotten sick of playing D&D and we collectively decided to start playing vampire the Masquerade since we couldnt decided on which edition of shadowrun to try out. My only real knowledge of VtM comes from playing Bloodlines when I was a teenager. We decided to go with V5 and after combing through the book... it just feels streamlined. I remember Malkavians having Dementation from Bloodlines but in V5 they have Dominate. I can only imagine how other clans had their signature disciplines gutted and added to a more broader discipline.
We already bought the core book for V5 and are debating on buying the others. Should we buy the other books or should I advocate for a different edition entirely?

Malkavians originally had Dominate. Dementation was a replacement in a later edition. V5 went back to the roots and gave Malkavians Dominate again, but rolled Dementation into Dominate. So Malks can still get Dementation, it's just part of Dominate now.
Clans in VtM never had signature Disciplines. If you want a game with more unique clans where each clan has their own signature Discipline, play Vampire the Requiem.

Requiem 1.0 is fine, at least the writing is less watered down (but not as bad as V5.... christ, they made that setting shit there)

There's always some discord shills trying to push Requiem in threads like this to get more people interested even though it's nothing to do with Masquerade and has different lore and fluff entirely. System sucks too.
If you want Masquerade like it was in Bloodlines, then you want VtM Revised, or V20. This has the actual Clans and fluff from Bloodlines.

Why play in gWoD when you could play in oWoD? V5 is absolutely fricking trash. My recommendation is and continues to be to play V20 as a base and then use fluff and content from V2 and VR (V20 is mostly a rules revision and rules bible).

This has nothing to do with oWoD or people that play in oWoD, and has everything to do with CtL and people that are really, really, really into CtL and only CtL. The rest of oWoD might as well not exist to these people.
Further, you're literally the only one that has mentioned CtL at this point, which suggests to me that you should take your meds, but also that you should not be left alone around children.

but buy 4th edition/kickstarter edition for rules
4th edition corbook is awesome in that 20 year of rules and clans are organized in a very efficient banner but it lacks the feel, the setting info , it is made for veterans, so get the revised 3rd ed book to compensate
v5 had quite a lot of changes from bloodline era vampires

V5 has the infinite money of paradox behind in and 90% of media content.
The other games are all dead, in most cases with good riddance.

I'm looking at trying to run a vtm game for a group that's only done d&d. My game store only has 5th available. What exactly is so bad about it that I should go back to an older edition?
in an attempt to streamlined it, they removed or condensed too much stuff, it's like if you're playing with LEGO and one day they take away your lego and give you DUPLO, way too streamlined
they also fricked up the setting, before V5 everything was very morally grey, as a proper world of darkness game should be, with overarching themes of struggling to keep your humanity now that you've become a monster spiced up with generational "sins of the father" type of conflict, all of this gets sidelined in V5
also in V5 it's crystal clear that the games is meant to be played with a very specific type of character in mind, this wasn't the case in older editions since they gave you a lot more tools to play with and be creative with
also if you dislike ""leftist"" pandering in games, they inject some in V5
play V20, it's way better
Do what I did, make a bastard combination consisting of:
V20 base rules and setting
V5 hunger, rouse check and advantage system
V5 bane/compulsion as weakness, bane severity is 10-morality
Morality is convictions so you can be an ass or on inhuman paths as long as it follows your own morality,
