the absolutely massive pokemon variety and seeing them and their mannerisms in the open world is a lot of fun.
between major areas you find at least 5-10 new pokemon every time instead of having to see the same 3 pokemon and their lines for 30 levels. you can also find some surprising choices of supercharged pokemon in the wild.
the villain team is underwhelming gameplay-wise
I was disliking the gyms at first until I met the electric gym which was so dumb it was funny
the rival has a fun personality, but her battles are too easy
basically it's super enjoyable if you enjoy filling the dex, though if you care about story in pokemon for whatever reason, then you'll be left disappointed. and yes, the game would probably be hailed as one of the better games if it had way less bugs and fps issues

I heard there were finally some overworld interactions with Pokemon. What do they get up to? Have they finally managed to do better than Ranger did in 2006?
There's shit all, really. Some mons will run away from you, some will run up to you, some will attack you. They don't interact with each other or the environment. Outside of sleeping most do frick all.
It certainly is more advanced than what was in PLA, but only fractionally.

It's honestly not great, but it directly addressed three of my least favorite things in Sword and Shield. Battles aren't in creepy detail free voids, there's actual shit to do besides just gyms and raids and the free roaming area feels expansive enough where it actually matters, more like Legends Arceus.
But some things are worse, like now that Pokemon crowd around each other, there's that common issue of getting linked into multiple battles in a row wether you want it or not. Free roaming is ultimately a half realized feature without scaling gyms/bosses/titans, specially since Pokemon still won't listen to you based on level, so you can't even over-grind and work backwards unless you just use your starter. Also raids still just aren't fun even if the song is good.
The exploration in this game mogs anything else in the series, performance issues haven't really hurt my experience outside of the main city where npcs are everywhere
