A middle-aged Half Elf might have already tried to play the entire bootstrapping game only to find themselves completely disillusioned with Human society despite their unique physiological advantages.

The long lifespan means that at least a couple of generations will die out before they have even half the chance to inherit anything without "accidents" happening. Half-elf children could also get impatient seeing daddy running things since forever.

After he procreated with his own shadow, Elven kind split into two, an Elf named Romulus and a Dark Elf named Reemus. Eventually due to breeding with other species, they've gradually lost their immortality and their lifespans have greatly lowered. The reason why Dark Elves have longer lifespans, is because after converting Christianity, the King of the Dark Elves made it so any interspecies relationship with a Dark Elf requires his approval, something he seldom gives.

realistically unless hybrids are sterile then you'd likely see settlements or even full blown kingdoms comprised of half elves or half orcs especially since they're suppose to be ostracized by most pure races.

Half elves are the real reason why the Elf race is going to go extinct. They are endemic to a race that the gods said should eventually inherit the earth, its why humans reproduce so fast, they literally just breed out whatever they can't immediately conquer.
The fact that humans and elves can reproduce in a setting is basically the gods painless euthanasia for their elder races as they transition to a new age, preferable to the violence and bloodshed that it would otherwise mean. I houserule that half-elves are sterile. Same with half-orcs or any humanoid hybrid, really. This puts them in an interesting place since they've got all the benefits of Eunuchs without needing to cut their balls off.

I know for a setting I want to make, elves are technically half-elves, being the descendants of human and fae pairings. Same with the drow but with hags instead of standard fae and generally less consensual.
No, the point of Aragorn and Arwen was to inject some more High Elvish heritage into the royal line once more. It's as tragic as any old couple dying where one partner can't accept it, since Arwen and her descendants become fully mortal.
It did separate Elrond from his daughter until the World ends but he's willing to accept that because he knows the marriage is fated and good to be, if Aragorn fulfills his destiny. Peter Jackson put a lot of pettiness and drama into the movies and made Elrond in particular look bad, but that's not the original character.
In my setting half-elves are both admired and seen as tragic. They are deliberately bred by the elven lords to provide elven forces with additional troops and to provide human nations with long-lived, well-educated leaders. The Elves hate this process, as it means parents outliving their children, but it's necessary because the world is caught in a pattern of cyclical crises. Elves are the only race long lived enough to see the cycles from beginning to end, and always have to help human societies rebuild or face getting over run by the forces of evil when the end of the current cycle comes.
Every half elf is viewed as a living sacrifice by the elves. Their elven relations are grateful to them, but can't get too attached without facing overwhelming grief. Humans admire the half-elves, but that just draws the half-elves into tragic relationships as they outlive friends, lovers, and even their mostly human children.

It's not actually known for sure whether or not Argonians or Khajiit can interbreed with men or mer, the Imperial University's study on the subject was inconclusive. Argonians are likely out since they're just uplifted lizards (although since "Argonians" are just differently shaped Hist according to the Hist they might be able to create hybrids with other hypothetical Hist-things), but I'd bet that Khajiit can have children with other species seeing as they likely have some ancestral connection to the Aldmer. Maybe whatever Azura did to turn the early, shapeshifting Bosmer into cats made them incompatible, but if Orcs are still mer enough to interbreed with men I don't see why an Ohmes and a Bosmer couldn't have children with a bit of effort and luck.
Also in The Real Barenziah there's a vague implication that Khajiit might be able to get Dunmer pregnant, but that's just a book so who knows.

I was thinking more pale skin due to dorf blood and living underground. Hair is usually silver, eyes are usually red due to a red pigment rather than a lack of color. Sometimes a genetic throwback will happen that has grey skin.

Personally, I think Elf/Orc, Elf/Dwarf, and other racial pairings should be more common. If nothing else, it could make Half-Elves more interesting again.

how the hell did all these beings manage to stay as distinct races if they all can reproduce with everyone? It's not like with humans where people had distant common ancestors, and can realistically pass as different races, these fantasy beings have super different features and origin unless you make them "anime elves" who are just pointy girls.
I feel like it would make the hate half breeds get more justifiable if they are an extremely rare occurrence between partners. The fact two different species managed to successfully breed and produce a child would add to the whole idea of belonging to neither as the child would be almost alien like.

Also, depends on setting. In Athas, for example, elves live at most 40 years longer than humans (usually less) and mature at the same rate, so literally nothing prevents elf-human romance except xenophobia from both sides.

Half-elves in DM are indeed outcasts with only a rough intermixing of the two species' positive traits. And due to two quirks of their biology, Elf and Human pairings are definitely tragedies. They can interbreed, but the offspring is always infertile, and for some reason the intermixing nearly doubles the child's life expectancy from its Elven parent.
One of the main characters, the Elf mage of the party, is revealed far into the story to actually be a half-Elf, and has accumulated tremendous childhood trauma as she's outlived her entire family and will never have one of her own. This drives her to take an adoptive role over a Human girl and go to extreme, self-destructive, and incredibly illegal ends to try and stave off her inevitable death.
