To be fair LB6 is about as long as the entirety of FSN and entirely focused on her vs splitting the attention between three heroines, it's pretty obvious Caster Artoria gets more development/characterization and what not. Also helps that it can pull from a lot of things that came before - like FSN Saber's story.

Castoria knew from the time of her birth that she was the "chosen one" and would eventually have to go on a pilgrimage culminating in herself committing suicide to save Britain and save all the Faefolk living on it.
The same Faefolk that hated her, tortured her, kept taking everything she felt affection to away from her and just all around made her life a living hell.
Her "destiny" was literally killing herself to save the land and people she hated like nothing else in the world with her having zero recourse or choice in the matter.
Artoria had it pretty fricking good in comparison. Sure she had enemies, but she also a lot of good times before she climbed on the throne, got loads of recognition and respect for her deeds, and had plenty of companions.

Saber went down that path of her own volition. She wasn't born a chosen one, she became that person. Merlin gives her a lot of chances to back out before he starts grooming her to become the person capable of fulfilling her childhood dreams.

Her personality is the polar opposite of Saber's, she doesn't want to save anyone, especially not through self-sacrifice, she secretly wishes the people she is forced to save would die the most gruesome deaths imaginable.
