I feel like people would be way more receptive towards this sort of artwork if it were titled 'what if there were real animals that looked like Pokemon' than calling them 'realistic Pokemon'.
I think it’s an interesting exercise in speculative biology. It’s also interesting how certain aspects of the Pokémon would be interpreted to fit a more realistic setting. To be fair, I’m only really interested in Arvalis’ realistic Pokémon, such as the one you just mentioned.
But these "real animals" that "look like pokemon" even miss the basic concept of the animal of that pokemon. They are trash. The fact there are autists like you that like this is the concerning thing but from a community of players that is entirely handicapped and incapable to read and scientifically only capable of visual memorization (but then again, not of words or their meanings lol), then it's expected

The Shaymin Shrimp is an obvious parody of the 'realistic pokemon' artists' obsession with turning everything into some kind of ugly-looking scary bug, often times as an alternative to an animal that would make more sense (here, a hedgehog.)

Yes, they are deranged. I'm even someone who likes arthropods, a lot of times these artists play up the 'ugly/scary' aspect while ignoring or downplaying the pretty/cute ones. Like never ask this kind of artist to draw you a Butterfree, you're expecting a huge beautiful butterfly, maybe with big goofy eyes and a proboscis but nothing anyone would call seriously ugly, and massive colorful wings. What you'll get is some kind of butterfly-wasp hybrid with tattered, thin, dull wings, big sharp mandibles, and covered in random patches of scraggly hair (or intentionally made to look greasy and dirty).
It's still stupid to try and apply real world animals to pokemon that clearly aren't animals. A realistic nosepass would just be a funky rock formation, a realistic vaniluxe with just be an icicle with some snow on it, and so on.

If I remember right it's based on the question of "what kind of animal could actually have grass growing directly on its back" and the artist figured a shrimp, which may have algae growing on it or something, is the animal that could most realistically have grasses growing on it.

i like semi-obscure dinosaurs as much as the next guy but it is absolutely meant to be spinosaurus. its godzilla posture is even similar to the way the holotype was originally reconstructed, which is also what every cheap plastic toy spinosaurus that every kid in the last 100 years played with looked like. that's what spinosaurus looks like in the public consciousness, and no surprise it's also what baxcalibur looks like.
except the face, ironically, which is comparitively long and narrow among theropod pokémon, and flared at the end, referring to modern depictions of the animal rather than the original, more basal megalosaurine reconstruction. that actually also excludes it from being based on concavenator, an animal very well known to have had a basal megalosaurine skull condition.
