As much as I enjoy breeding in game, the in setting version of it is likely much more specialized. What are some suggestions for possible things to raise in that manner? Think it would be fairly mundane like raising mudsdale for typical draft horse work. I suppose if you lived somewhere like Galar if you had the contract you could be the person raising Corviknight for the taxi service. Otherwise I'm sure linguistics could be potentially interesting.
I've always headcanoned that the starters are purpose-bred on farms, as a reasonably powerful, easy to train beginner pokemon to be given to newbie trainers. Hence why you don't find them in the wild.
I could also see raising pokemon being a half farm, half school type thing, depending on how intelligent the pokemon are. Say, you raised a litter of Riolu's, you'd be teaching them martial arts and physical training, maybe how to read and do sums and the like, so they're in peak physical and mental condition for prospective trainers.
I think starters and humanoid/job-inspired Pokémon are selectively raised by humans, like how we’ve done with common domesticated animals, such as: cats, dogs, cattle, so on and so forth. Would be weird if things like Hitmonchan and Hitmonlee just resembled boxers and kickboxers out in the wild before human civilization began, I would kinda understand if Hitmonlee’s ancestor pokemon had stretchy legs and Hitmonchan’s ancestor pokemon had padded fists.
That would be pretty nice, just settle in on a property and make starters to pass on to professors and stuff. Get a working relationship with the locals and keep your starters tip top.

can not really just dump a high level mon on a rookie trainer so a lot of trainers will probably just get most of their team in the wild.
aside from particularly rare or foreign pokemon gonna be hard to compete with the canon two bucks of a basic pokeball.
the starter pokemon are oddballs that may or may not be given out that often so probably some market for breeders in a safer start than just throwing balls at whatever peeks out the grass
Honestly, I’d wish to be a wandering veteran pokemon master who tests the potential of new trainers, but I’ll probably just be an engineer like I am IRL if the veteran option doesn’t help keeping me (and my Pokémon) fed and get sick of waiting on mountain tops with recognizable landmarks conveniently placed towards the region’s champion all the time.

I work in a public library irl and I love it, so I could see myself doing something like that in the pokeworld. I'd love to help kids find research on their first pokemon, and just research in general. In my downtime I'd travel to different libraries around the world reading up on different legendaries and mythicals.
I like normal and fairy types so I think it would be a nice fit. If I could pick one to work and travel with it would be Tandemaus/Maushold. They could help shelve books and the kid mice could help with kid's arts and craft programs. It would be a simple comfy life.

I’d say frick everything and travel for life. Deep jungles and high mountains, I’d explore every inch of the planet if I had pokemon to protect and transport me. Build up money by doing odd jobs in towns I like. Work on writing and art, maybe I publish a banger. Help people where it’s needed.
I’d probably end up falling in love with someone and settling down with whatever random job is most suitable though.

I wouldn't mind being one of the rangers on the Sevii Islands or Hoenn. Seems like it'd be a pretty cozy life. Get to see amazing natural locations with my Pokemon, comfortable weather, always have a great view of the ocean, and the girls look great in those uniforms.
