the only one of these that really comes off as a clear dual type are grapploct and sirfetch'd
you COULD justify dual types for the others, but it's not like they come off as incomplete without them the way those two do

Passimian just wears leaves on its body and tosses a fruit around, it doesn't actually have anything to do with being a grass elemental monster the same way something like Rillaboom, a guy with grass literally growing out of it, does.

Water creatures not being water type is because there 200 water types already and lots of acuatic creatures left to do. Half the secies live in the water but making half the pokemon water type would be boring
I could see Conkeldurr being fighting/rock at a glance, but if you look at the whole line it makes sense that it's not. They're burly construction workers, the stuff they're carrying is just building materials, not part of their actual body or identity or whatever. The rock moves they learn by level-up are already plenty.
fighting became the type to give to anyone that fights, which is any pokemon, and a lot of animals standing on 4 legs.

Paldean Tauros are literally Spanish fighting bulls. Them being pure Fighting makes total sense.

I find this amusing amongst competitive players that dual typing is always a benefit. If you get a niche move instead, the pokemon would see more usage.
