How about the English wiki list her a woman as she is one in the English localization and the Japanese wiki lists him as a man as he is one the Japanese version of the game and then have a separate page for differences between versions? Is that not straight-forward enough?

Beyond getting every fact straight, she should be referred to as she, because it is disrespectful and rude to refer to anyone as anything other than their preferred pronoun.
