Because Zelda is babies first fantasy setting and you're not supposed to think too hard about any of it. The devs put as much thought into the lore as your average LN isekai writer does.

In BOTW the ancient technology belonged to the Sheikah who still dabble in science, but forsook the ancient advanced technology. The kingdom did find their old tech and tried to use it but Calamity Ganon hacked it and destroyed everything. The advanced technology in TOTK is from the Zonai and nobody knows anything about them.

I'm playing the first few hours in Japanese and there's a lot of informational nuggets that aren't present in the translation, especially when you talk to Robbie, Purah, Josha and the Lookout Point NPCs

All but the second point (which I may have missed) are mentioned in the Spanish localization.
The English localization of BotW also had a lot of missing and botched details (such as Ganon being unable to abandon his current form due to all the accumulated hatred from reincarnating so many times) that were intact in every other language.
I gathered the last one when doing to the dye shop and seeing the weirdo's kid go from toddler to preteen. I'm guessing the amount of time Link's been gone is the 6 years from the last game.

It's explained that Sheikah tech is still around but the Zonai tech is a bit more advanced so Link is using that now.
The Purah Pad and the Lookout Towers still use Sheikah technology, but Zonai engineering is miles beyond what Purah could do.

It's massively hindered by their batter consumption to the point of making it useless for anything actually functional and helpful, and these machines deal is sometimes even lesser than literally gluing a rock on a stick.

Zonai seem to be more in touch with nature so their tech is more advanced, but is more for doing simple things and so it doesn't need much power. It's also more magical like the shrines aren't just underground anymore, they're portals to a completely different space.

Plus, it beats having to use a Sheikah slate to lift heavy objects. Having your arm do the work is easier and more intuitive.
